The Wisconsin Department of Agriculture, Trade and Consumer Protection (DATCP) is responsible for the regulation of food processing facilities in the state. This includes meat and poultry plants, dairy processing plants, egg processing plants and food manufacturing facilities that are required to register with the state. The Food Processing Commercial Cooks course is designed to teach individuals how to become a commercial cook in a meat or poultry plant or dairy production facility. These courses are offered by several area schools including Madison Area Technical College (MATC).
The purpose of this course is to train students on how to safely process food products at a commercial level in accordance with federal regulations. Students will learn about sanitation techniques for food preparation areas; safety procedures for working with chemicals; safety procedures for working with machinery; proper cleaning and sanitizing techniques; proper handling of raw materials; storage procedures; proper storage temperatures; food handling techniques; employee health issues and much more!
